Doronico is a hard cheese made from cow’s milk. It is produced in Allgäu in southern Bavaria, a rural land which has always had a tradition of agriculture and animal rearing for cheese production. In Allgäu, the cows are reared naturally. The cattle are free to graze in the alpine valleys, where their pastures contain a rich variety of flowers. This natural cattle feed gives Doronico its typical amber yellow colour and intense aroma, with a delicate milky scent.
Doronico is made according to a traditional dairy process typical of the more popular hard cheeses.
